Shiitake Mushroom Soup

Emperor shiitake mushrooms quickly and easily create a rich and flavorful shiitake mushroom soup.



Ingredients

 
  • Approximately 200 g of shiitake mushrooms

  • 1 onion

  • Oil

  • A knob of butter

  • 2 tbsp of soy sauce

  • 2 dl of water

  • 1 vegetable bouillon cube

  • 2-3 dl of heavy cream

  • Salt

  • Black pepper



Directions

 
  1. Chop the onion and cut the mushrooms into slightly smaller pieces.

  2. Sauté the onions and mushrooms in a mixture of oil and butter.

  3. Add soy sauce, water, and vegetable bouillon. Boil for about five minutes.

  4. Add the cream and boil for a couple of minutes.

  5. Blend using an immersion blender or a regular blender.

  6. Season with salt and black pepper.
